Ingredients
  

  • 1 cup Cottage Cheese regular or low-fat
  • 2 cups Whole Wheat Flour or gluten-free flour for GF option
  • 1 tsp Baking Powder
  • 1 tbsp Olive Oil
  • 1/2 tsp Salt
  • to taste Herbs e.g., parsley, thyme, or rosemary
  • as needed Water to adjust dough consistency

Instructions
 

  • In a large mixing bowl, combine the cottage cheese, whole wheat flour, baking powder, and salt. Mix until well combined.
  • Add olive oil and fresh or dried herbs. Gradually add water, one tablespoon at a time, until the dough comes together.
  • Knead the dough gently on a floured surface for about 5 minutes until smooth and elastic. Cover with a damp cloth and let rest for 10 minutes.
  • Divide the dough into small portions, roll each into a ball, and flatten into thin circles or ovals (about 1/8 inch thick).
  • Heat a non-stick skillet or griddle over medium heat. Lightly grease with olive oil and cook the flatbread for 2-3 minutes on each side or until golden brown spots appear.
  • Remove from heat and keep warm under a clean kitchen towel until ready to serve.

Notes

For extra flavor, add garlic, chili flakes, or different herbs. Avoid overcooking to keep the flatbread soft.
