Ingredients
  

  • 1 cup Crab Meat Fresh crab meat, such as king crab or blue crab
  • 4 Egg Yolks
  • 1 cup Heavy Cream
  • 1 tsp Dijon Mustard
  • 1 clove Garlic Minced
  • 2 Shallots Finely chopped
  • 1 tsp Fresh Lemon Juice
  • 2 tbsp Brown Sugar For caramelizing

Instructions
 

  • Preheat the oven to 350°F (175°C) and prepare a water bath in a large baking dish.
  • Whisk the egg yolks in a bowl, then add the heavy cream, Dijon mustard, garlic, shallots, and lemon juice. Stir until smooth.
  • Gently fold in the fresh crab meat, being careful not to break up the delicate pieces.
  • Spoon the crab mixture into individual ramekins, leaving space at the top for the caramelized sugar.
  • Place the ramekins into the prepared water bath and bake for 25-30 minutes, or until the custard is set and firm in the center.
  • Remove the ramekins from the water bath and allow them to cool for 15 minutes at room temperature, then refrigerate until chilled, at least 1 hour.
  • Before serving, sprinkle the brown sugar evenly on top of each ramekin and use a kitchen torch to caramelize the sugar until golden and crispy.

Notes

For an added twist, consider experimenting with adding a hint of lemon zest or a dash of cayenne pepper to the custard mixture.
