Ingredients
- 4, butterflied and sliced Chicken Breasts
- 1 pound Penne Pasta
- 2 tablespoons Olive Oil
- ½ cup, chopped Sun-Dried Tomatoes
- 1 cup Heavy Cream
- ½ cup, freshly grated Parmigiano Reggiano Cheese
- 1 cup Chicken Broth
- 3 cloves, minced Garlic
- 1 small, chopped Onion
- 1 teaspoon Italian Seasoning
- 1 teaspoon Paprika
- To taste Salt and Pepper
- For garnish Fresh Basil
Instructions
- Cook the penne pasta in salted water according to package instructions. Drain, reserving ½ cup of pasta water for later use.
- In a large skillet, heat olive oil over medium-high heat. Add the chicken and cook for 5-7 minutes until golden brown and cooked through. Set the chicken aside.
- In the same skillet, sauté onions until translucent, then add garlic and cook until fragrant.
- Add the sun-dried tomatoes, chicken broth, and Italian seasoning. Stir and let simmer for 2-3 minutes.
- Pour in the heavy cream and add the grated Parmigiano Reggiano cheese. Stir continuously until the sauce thickens, about 3-5 minutes.
- Add the cooked chicken back to the skillet, then toss in the pasta, adding reserved pasta water if needed to achieve the right consistency.
- Season with salt, pepper, and paprika to taste. Garnish with fresh basil before serving.
Notes
For a lighter version, substitute half-and-half for heavy cream. You can also use fresh cherry tomatoes instead of sun-dried tomatoes during summer.
